Mitchell State Park – Whitetail Processing and Cooking Clinic at Carl T. Johnson Hunting & Fishing Center, 6087 East M-115, Cadillac, Michigan, 49601, from 9 a.m. to 6 p.m.
This class will cover field processing, skinning, deboning and prepping venison for grinding and cooking and preparing wild foraged foods to be cooked. Instructors will demonstrate how to make a venison smoked summer sausage and preparing and preserving wild foraged foods. Recipes/techniques covered have included holiday smoked fish dip, venison hot dogs, breakfast sausage, smoking techniques and more.
Cost for this class is $60. Registration is required.
